- 1 lb organic, pasture-raised chicken breasts
- 1 organic Vidalia onion, diced
- 3 celery stalks, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 tbsp avocado oil
- 2 cans organic diced tomatoes
- 1 jar organic artichoke hearts, chopped
- 1 tbsp fresh thyme
- 1 tsp ginger-honey vinegar (or any vinegar of choice)
- Salt and pepper to taste
- Organic fusilli pasta for serving
Instructions:
- Set your pressure cooker or instant pot to sauté mode. Add avocado oil and heat.
- Sauté the onion, garlic, celery, and carrots until softened (about 5 minutes).
- Push vegetables to the sides and add chicken breasts. Brown for 1 minute per side.
- Add diced tomatoes, artichoke hearts, thyme, vinegar, salt, and pepper. Stir to combine.
- Close the pressure cooker lid and cook on high pressure for 13 minutes.
- Allow for a natural pressure release.
- While the soup is cooking, prepare fusilli pasta according to package instructions.
- Serve the soup over a bed of fusilli pasta.
